Pumpkin and Pecan Muffins

These muffins are not only delicious, but they smell heavenly, and so will your kitchen. Your going to have a hard time trying to keep these around for company!

Pecan and Pumpkin Muffins

Ingredients you will need:

1 cup pumpkin puree

2 eggs (beaten)

1/2 cup chopped pecans

2 cups flour

1 teaspoon baking soda

2 teaspoons baking powder

1 teaspoon cinnamon

2/3 cup brown sugar

1 teaspoon vanilla extract

Preheat your oven to F 350.

Get a large mixing bowl, and add your flour, brown sugar, cinnamon, salt, baking soda and baking powder in it.

Mix it well.

In a second bowl add your puree, eggs and vanilla and mix it.

Now combine the two mixes, until just combined.

Try not to over mix this batter.

Get your pecans and fold them into the batter.

Line a muffin tin and fill each section about 2/3 full.

Bake in the preheated over for about 20 minutes, or until the muffins are golden and baked through.

You can test that with a tooth pick. Stick a tooth pick into the middle of a muffin, and if the tooth pick comes out clean, the muffins are done.

Remove the muffins from the oven and let them cool.
