(NUI) - You've heard the statistics: One in three Americans is obese. In 2000, there were 400,000 obesity-related deaths -an increase of 33 percent in 10 years. Furthermore, obesity may soon replace smoking as the nation's leading cause of preventable death, according to a report by the Centers for Disease Control and Prevention.

With Americans' expanding waistlines in the spotlight, carbohydrates have assumed the role of public enemy No.1 in the weight-loss battle. Why? Thousands swear by the popular low-carbohydrate diets, saying these diets have worked where all others have failed.

Carbohydrates, found in starchy foods such as potatoes, bread and pasta, are converted into sugar during the digestive process. Sugar means calories, which are stored as fat cells if not burned off with exercise. When your body accumulates these stored fat cells, you gain weight. People on a low-carb diet are able to lose weight by limiting those starch calories.

However, some health experts warn against neglecting healthy foods, including some fruits and vegetables that are higher in carbohydrates but full of necessary nutrients. Instead, they encourage losing weight with regular exercise and a balanced diet that includes eating carbohydrates in moderation.

So how can you eat a balanced diet and still reduce the calories you consume from starch?
